
Do you love stuffed crust pizzas? Well, if you ever make that dream trip to Italy, be sure to remember NOT to ask for them at the local restaurant. Italians are proud of making pizzas in the traditional way and they never (hardly ever) make them with stuffed crusts.
A pizza crust may seem a bit plain especially when the rest of the pizza oozes cheese, tomatoes, garlic, oregano/basil and a variety of flavours. But that’s exactly the point. The plain crust mellows what is otherwise a flavourful bite and thus balances out the eating experience. The plainness of the crust is actually a part of the eating experience for Italians. That part is lost if the crust is also stuffed with more flavours.
Also, a traditional pizza maker in Italy will let the dough ferment for as long as possible without letting it spoil because in this way, the enzymatic processes will give you a pizza that is light and easy to digest. Pizzas are not meant to be heavy on the stomach.
You may want to chew on that a bit before you order in a pizza again.
