
This curd rice, aka thayar saadam in Tamil, will have you rethinking what happens when rice meets yoghurt
Curd rice is the hallmark of South Indian cuisine. You’ll find it in each of the five states that make up South India; in fact, you’ll find a deliciously different version in almost every locality of each state. All of them, however, are likely to have one thing in common – they will have just enough spice to ensure they are not bland but not so much spice that you will rush for your glass of water.

Curd rice recipe
Ingredients:
2 cups cooked rice
1 cup yoghurt (aka dahi/ curd)
1/4 tsp mustard seeds
2 green chillies, chopped
1 red chilli
12-15 curry leaves
A 1 inch piece of ginger, grated
2 tsp oil
Salt to taste
Method:
Mix the rice, yoghurt, salt and grated ginger. Keep aside.
Heat oil in a frying pan. Add mustard seeds. When they splutter, add green chillies, red chilli and curry leaves. Stir.
Switch off the flame and pour this spice mixture on to the rice mixture.
Mix well.
Serve cool or at room temperature with mango or lemon pickle.
