Gluten-free mathri

Missing mathri because you are avoiding gluten products? Here’s an equally tasty alternative!

Mathri is a tasty snack that you can enjoy with or without a cup of tea. But what if you are staying away from gluten? Does that mean you have to stay away from mathri too? Not anymore! This recipe gives you all the taste and flavour of mathri without the gluten. Enjoy!

Mathri recipe (gluten-free)
Makes 8-10 mathris

Ingredients:
30 grams sorghum flour (jowar atta)
60 grams rice flour
30 grams chickpea flour (besan)
4 tsps (20 grams) ghee
1/4 tsp ajwain
1/4 tsp guar gum
Oil for frying
Salt to taste
20 ml water

Method:
Mix together the three flours, salt, guar gum and ajwain.

Rub in the ghee with the flours to achieve a crumbly, flaky dough.

Add a little bit of water at a time and knead the dough. The dough needs to be very firm so don’t add too much water.

Cover the dough and let it rest for about half an hour.

Make small balls of the dough, press them between your palms or shape them with a round-shaped mould. Take a knife or a fork and prick the dough.

Heat oil in a frying pan. Add the round-shaped pieces of dough to the oil and fry them till they are golden brown.

Drain the excess oil with a tissue and set aside.

Serve warm.
